Three different cheeses, three different kinds of chicken- Chicken Tikka, Buffalo chicken, Chicken Meatballs- three Great Pizzas!

So normally whenever we make fresh pizzas at home (and by we I mean only my mom and my brother since they hog over everything) “we” normally get fresh pizza dough from a bakery, which we roll out ourselves and all that jazz. But yesterday, I was out grocery shopping and I saw a box of 12 mini pizza dough(s), ready cooked and frozen and I thought “Awww! Look at those little guys! *must get!!*”. And so, I bought them!

I bring them home, put them to bed inside the freezer, and get busy trying to decide what kind of pizzas to make. Now, at this point in time I had four great cheeses residing next door to the recently moved in mini pizza dough.

  1. Dutch smoked cheese with mixed herbs & spices
  2. Gouda Cheese
  3. Cheddar Cheese
  4. Mozzarella Cheese

So I thought, justice cannot be done by making just one kind of pizza. Which is why I made 3! The next morning it was time to introduce the cheeses to their respective pizza partners. I decided to pair the Dutch smoked cheese with the Chicken Tikka as I thought it would go well with the smokey-barbequey feel of the chicken tikka. Needless to say the cheddar went with the buffalo chicken and the Gouda ended up on top of the chicken meatballs. (naughty gouda! :P )

 

Buffalo Chicken Pizza

Yields: 1 mini pizza (multiply quantities accordingly)

  • Boneless chicken (diced)      50 gms
  • Cheddar Cheese                        20 gms
  • Mozarella Cheese                     20 gms
  • Celery finely sliced                 10 gms
  • Spring onion                              garnish
  • Pizza sauce (store bought)   2-3 tsps
  • Paprika                                         1tsp
  • Red chilli powder                     1/2 tsp
  • Hot sauce                                     1 tbsp
  • Butter                                            1 tbsp
  • salt & pepper                               to taste
  • Dried oregano                             a pinch
  • olive oil                                         to grease
  • Pizza Dough

Chop up about half a chicken breast into small bite sized pieces and throw into a lightly greased skillet with the paprika, red chilli powder and a little bit of salt and pepper (if you want) and stir fry on medium heat until the chicken is cooked through (the amount of chicken we have should take 10-15 minutes to cook, beware of salmonella though :P ). Once the chicken is cooked, spoon it out of the skillet. In the same pan melt the butter and add an equal amount of hot sauce and combine  together. Throw in the cooked chicken into the sauce and coat well. Turn off the heat and set the chicken aside. Place the pizza dough on a greased pizza pan/ baking sheet and spoon over the pizza sauce on top. Then layer the chicken and celery on top and finish off with shredded Cheddar and Mozarella Cheese. Sprinkle a pinch of dried oregano on top, since we do still need to give it an italian touch, and pop it in the oven. Since the dough is cooked, bake the pizza in the oven just until the cheese melts, i.e. 5-10 minutes at 180 degrees celsius. If you’re using fresh uncooked dough then bake in the over at 200 degrees Celsius for about 20 minutes. Once baked, garnish with chopped spring onion and devour!

 

Chicken Tikka Pizza

Yields: 2 mini pizzas

  • Boneless chicken (diced)      50 gms
  • salt                                                  to taste
  • red chili powder                       1/2 tsp
  • Turmeric Powder                     1/4 tsp
  • Garam Masala                             1/4 tsp
  • Cumin Powder                            1/2 tsp
  • Yogurt                                            1 tbsp
  • Tomato Paste                               1 tsp
  • Lemon juice                                  1 tsp
  • Crushed ginger                             1/2 tsp
  • Crushed garlic                               1/2 clove
  • Pizza Sauce                                     2-3 tsps
  • Smoked Dutch Cheese               20 gms
  • Mozzarella Cheese                      10 gms
  • Finely sliced Onion                     10 gms
  • Cilantro                                            to garnish
  • Dried oregano                               a pinch
  • Olive oil                                           to grease
  • Pizza Dough

 

Same protocol as with the Buffalo chicken pizza: Greased pan, pizza sauce on dough etc. Take the chopped up chicken and mix together with all the spices, yogurt, tomato paste, lemon juice, ginger and garlic. Coat well and let it marinate for atleast an hour in the fridge. Once it’s marinated, cook the chicken in a greased skillet on medium heat. Once the chicken is cooked through, place it on top of the already sauced pizza dough. If you want you can add some finely sliced green chillies on top of the chicken… if youre a pansy when it comes to spicy food then don’t! :P Sprinkle shredded Mozzarella and smoked Dutch cheese on top and finish off with a sprinkle of dried oregano and a couple of rings of sliced onion. Pop in the oven for 5-10 mins @ 180 degrees Celsius and garnish with chopped Cilantro once done. Once again, if using uncooked dough bake for about 20-30 mins @ 200 degrees Celsius.

 

 

Chicken Meatball Pizza

Yields: 2 mini pizzas

  • Minced chicken             70gms
  • Parsley                              5 gms
  • Cilantro                             5 gms
  • Spring onion                   5 gms
  • Black pepper                   1/2 tsp
  • red chili powder            1/2 tsp
  • salt                                       to taste
  • Bell pepper (diced)       10 gms
  • mushrooms (sliced)     10-15 gms
  • onions (diced)                 10 gms
  • Pizza sauce                        2-3 tsp
  • Dried Oregano                 a pinch
  • Gouda Cheese                  20 gms
  • Mozzarella Cheese           10 gms
  • Olive oil                              to grease
  • Pizza Dough

Chop up boneless chicken breast enough so that it can fit into a food processor. Throw in the parsley, cilantro, spring onion, black pepper, red chilli powder and salt into the food processor together with the chicken and blitz until the chicken has turned into mince and everything is combined together. Spoon out the minced chicken ( which should look rather green, yes its ok if yours looks too green) into a bowl and make little meatballs and set aside. Using a little bit of oil on your palms helps with the “ballin” process. Once you’ve made all the meatballs, place onto a greased skillet and cook on medium heat, tossing and turning the pan around until the meatballs are nicely colored on all sides (well almost all). I’d say for about 10-15 minutes. Once the meatballs are done, place on top of sauced dough, sprinkle with diced bell pepper, onions and sliced mushrooms. Slap on the cheeses and finish with a pinch of oregano. Bake for 5-10 mins @180 degrees celsius if using pre-cooked dough and for 20-30 mins @ 200 degrees if using uncooked dough and Voila!! yummy goodness is ready to enter your belly!!
