Fried Potato Cakes

Potato? Gooddd! Meat? Goooddd! Deep Fried meat and potato? *Tim Allen grunting* good good goooddd! Is it healthy? errmm not so much. But hey the minced meat had carrots and celery in it. That’s gotta count for something right? I’m just kidding though it’s not deep fried. All you health freaks out there don’t get your panties all up in a twist. It’s shallow fried! teehee! I just said deep fried to create drama lol.

Here’s what you need:

  • Potatoes                800 gm
  • Minced Beef         1kg
  • Onions                  150 gm
  • Celery                    60 gm
  • Carrots                  60 gm
  • Garlic minced          1 tbsp
  • cumin powder          2 tsp
  • Red chili powder     1 tsp
  • Black pepper             1 tsp
  • salt                              to taste
  • Fresh Thyme            handful
  • water                          1/2 cup
  • Olive oil                     3-4 tbsp
  • Seasoned Flour       plateful
  • beaten eggs             2
  • Breadcrumbs          plateful
  • olive oil again        for shallow frying

Place the potatoes in a pot full of salted water  and let it boil until the potatoes are fully cooked through. Once tender, mash the potatoes and season with some salt and pepper. Chop up the onions, celery and carrots into really tiny 3 mm cubes (brunoise). This needs to go into the mashed potato and so, your minced meat mixture should not be too chunky. Pour some olive oil into a pan and sauté the onions carrots and celery for about a minute. Now add the minced meat and some garlic and sauté on high heat until the meat has changed color. Then sprinkle the cumin powder, red chili powder, salt and black pepper and keep sauté-ing on medium to high heat until the moisture dries out. Once that happens, throw in a handful of thyme over the minced meat, pour 1/2 a cup of water into the pan, cover with a lid and let it simmer on low heat for about 30 minutes to an hour. Keep checking to see if the meat hasn’t stuck to the bottom of the pan (which it shouldn’t but if it looks like it might then add a little more water until the minced meat is cooked through). Once the meat is tender and cooked through dry up any remaining water by sauté-ing on high heat. Adjust seasoning and set aside.

Mash the potatoes with a little bit of seasoning and if you want you can add a few finely chopped herbs in there aswell. DO NOT put blade to potatoes! Mash them the old fashioned way or in a mouli but never in a food processor or anything that has a blade in it. I learnt that the hard way. In order to make the patties, get a little assembly line going of Potatoes, minced meat, seasoned flour, beaten eggs, and breadcrumbs (in that order). Grab an egg-like amount of mashed potatoes and flatten it out on your palm. Plop two teaspoons of minced meat in the middle of the potatoes and then start to slowly enclose it. Once a patty like or a cylindrical shape has been obtained, coat first in flour that has been seasoned with salt and pepper, then drench in eggs and finally cover in breadcrumbs. Shallow fry in some olive oil and enjoy!
