Baked Sweet Potato Fries

So…my mom doesn’t like sweet potatoes! Therefore, in the past 24 years of my existence, I don’t remember ever seeing a single sweet potato in our house. I see them at the supermarket quite often though and to be honest, those bad boys be uglay!! So needless to say I was never really drawn to them so much myself. They look like shrivelled up you-know-whats!!

Anywhoooo, I conjured up the courage to buy some the other day. But I was with my mom. So I needed a plan to take these uglies home with me. I grabbed one of those plastic baggies and was on standby…waiting for my mom to..you know…get busy with the tomatoes or something. And so she did, she left me alone for about a minute until she went to go grab something else. I watched as she was walking away, eyed down my potatoes , turned to her again, and then… as soon as she took a turn down the aisle…I leaped towards the sweet potatoes!! In my enthusiasm to grab them sweet potatoes I almost delved my hand straight into all that nasty-ness before I stopped mere inches away from sweet potato haven. I decided it would be wise to place the existing baggie over my hand and grab another one…i wanted sweet potatoes…not the dirt that came along with it!

Realizing that all these dirt avoiding schemes probably took 30 seconds off my 1 minute mark, I got cracking! Sadly though, I had no idea as to how one is to pick out sweet potatoes. They ALL looked like they could be well past their expiry date. But I thought: enough with with this veggie racism Yusra and just pick one! So I grabbed two medium sized sweet potaotes, put them in my bag, and hid them nicely under the bread and eggs in my trolley.Then I proceeded to lean against my trolley while staring nonchalantly into space as my mom walked towards me with her bag of tomatoes and… other stuff I frankly couldn’t care about.

Now…you must be wondering…what happened at the checkout counter Yusra?? How did you manage to hide the sweet potatoes then hmmmmm?? Well, I didn’t need to hide them because…what kind of an evil parent would send a kid back with their 2 measly sweet potatoes? And so, that is how those 2 brave courageous souls ended up within the confines of my house. And…then….eventually…lost their lives during battle inside an oven :(  You shall be missed dearly oh brave sweet potatoes! (my god! I’ve completely lost it!)

 

 

Sweet Potato Fries

Let’s just start. Here’s what you need:

  • a bowl

and in this bowl…you need to put in the following

  • olive oil                             1tbsp
  • butter                                 1tbsp
  • cayenne pepper               1/2 tsp
  • cumin powder                  1/2 tsp
  • celery salt (optional)          a pinch
  • salt n pepper                     a pinch

Mix it all together really well and then toss in you sweet potatoes cut in whatever length and thickness you want. I made them slightly thin because I wanted them to be crispy. Make sure all the sweet potato fries are covered well in the olive oil and spice mixture. Preheat oven to 180-200c . Line a baking sheet with parchment paper, or use one of these mesh things that I used. I have no idea what they’re called. Spread out the sweet potato fries on the baking sheet making sure they aren’t touching each other. No touchy! Nooo touchy!…. No touch!! (virtual high five if you know that reference! ;) ) Bake for about 20 minutes to half an hour or until they look nice and crispy to you. Make sure you flip them around a lil after about 10 minutes into baking.

Let them cool for about 5 minutes before you devour them!
